P.F. Chang Inspired Asian Lettuce Wraps

by ash10
These are soooooo good and sooooo easy! My mother and I have been on a low carb diet and I was truly craving some Chinese Food of some sort but everything comes with rice. Then came Mommy to save the day with her Asian Lettuce Wraps!! They’re so sweet and savory! They’re actually really hard to stop eating!
Ingredients:
¼ Cup Cooking Wine
1lb Diced Chicken Breasts
2 Tablespoons Corn Starch
1-Tablespoon Sugar
1-Cup Hoisin Sauce
¼ Cup Rice Vinegar
¼ Cup Soy Sauce
½ Cup Sweet Chile Sauce
2 Tablespoons Dry Sherry
¼ Cup Oyster Sauce
2 8oz Cans Drained Diced Water Chestnuts
1 Medium Diced Onion
¼ Cup Minced Ginger
¼ Cup Minced Garlic
Sesame Oil
Lettuce (We use red leaf lettuce because it’s soft, delicate, and yummy; however, restaurants use iceberg because it’s sturdy.)
Preparation:
We’ll start by cleaning and dicing our chicken breasts. The size of your diced pieces of chicken should equate to the size of the tip of your pinky finger or smaller. Once that’s finished, place your chicken in a large mixing bowl. Season the chicken and add corn starch, sugar and cooking wine to the bowl of chicken and mix until everything is evenly coated.
Mince your garlic, ginger and onion and in an oiled, heated Wok, cook your ingredients until they’re soft. Add your chicken, and cook until chicken is browned.
Mix your hoisin sauce, rice vinegar, soy sauce, and sweet chili sauce together to create the sauce for your chicken. Once your chicken has finished cooking, add the sauce and mix thoroughly! Add your diced water chestnuts and just a dash of sesame oil. Mix everything together in your wok, and let cool!
Wash and dry your lettuce, add your chicken to your lettuce and eat Fabulously!
