Italian Style Family Lasagna

This has to be my favorite meal… but who, honestly, doesn’t love a good Italian Dinner! We made this for some friends and they loved it!  It makes great leftovers and it packs well for lunch in your office.
Ingredients:
2 large cans crushed tomatoes
1 jar of your favorite spaghetti sauce
1 16oz container Ricotta cheese
1 16oz container sour cream
10oz fresh or frozen chopped spinach
4 scallions
2 lbs lean Italian style turkey sausage, without casing
1 large yellow onion
1 large bell pepper
2 boxes lasagna noodles
2 bags shredded Italian blend cheese
2 bags shredded mozzarella
1 bag  shredded parmesan cheese
6 garlic cloves, minced
Season with: Italian Seasoning, Oregano, Basil, Parsley, Lawry’s Seasoned Salt, Garlic Powder
Preparation:
So there are a lot of steps to this recipe but also a lot of repetition.  So in the words of Tina Turner, we gone take this nice and easy…
Grab yourself a large pot, throw a little olive oil in there and put it over medium heat.  Once your olive oil is hot, throw in your minced garlic and chopped yellow onion and bell pepper.  Let those cook until soft for about 7 minutes.  Next you want to add your Casing-less Italian Sausage.  Mix everything in your pot thoroughly and let cook until done.  Add two cans of crushed tomatoes and season it to taste.  Let that cook for 2 minutes and add a jar of your favorite spaghetti sauce.  Let this cook for about 10-15 minutes.  Add your spinach at the very end.
Now, simutaneously, begin to boil your lasagna noodles while your sauce is simmering.  Add a little olive oil and salt to your pot of boiling water prior to adding your noodles.  It’ll keep your noodles from sticking together.  Once your noodles cook al-dente, strain them but do not rinse them.  We aren’t fully cooking the noodles because they’ll cook in the oven and we aren’t rinsing them because we want them to adhere to each other while they continue to cook in the oven.
It’s time to get your baking pan ready and preheat your oven to 350 degrees!!!  Because we hate to clean up, we line our pan with parchment paper.  Next, line the bottom of the pan with a layer of lasagna noodles. Set that aside.  In a large mixing bowl, mix the ricotta cheese, sour cream and chopped scallions together.
Take out to your baking pan! Layer your ingredients as follows:
1. Lasagna Noodles
2. Turkey Sausage Sauce
3. Italian Blend/ Mozzarella Combo
4. Lasagna Noodles
5. Riccota/ Sour cream Combo
6. Repeat steps 1-5 until the last layer…
…will consist of the Turkey Sausage Sauce and cheese (so save some for the top).  Spread the sauce evenly over the top of the Lasagna and cover it with your remaining cheese.  Place your lasagna in the oven uncovered to bake for 45 minutes!
