Hey Faithful Foodies,
This week is going to be an exciting one for me. I’m preparing Mexican Roadside Chicken. I just marinated the whole chicken with apple cider vinegar, fresh squeezed orange juice, mexican oregano, pure ground chili powder (Ancho chili powder), mexican cinnamon, cloves, minced garlic and salt. I’ll let it marinate overnight and put it on the grill tomorrow. I can’t wait to taste it; the blend of those spices wafting through the air of my kitchen made my mouth water. I’ll keep you posted on the results. I’ll post photos and the recipe, tomorrow.
I’m also signing up for cooking classes this week. I am so psyched about the classes. There are two classes that I’m interested in taking, tomorrow. There’s a Valentine’s Day Aphrodisiac class which features an Oyster and Brie Champagne Soup, Argula Salad with Roasted Asparagus, Saffron Paella, and a Chocolate “Love” Cake. The second class features a Spanish Chicken Stew and Manchego Polenta. I’ll find out in the morning which class is still available. There are other classes later in the week that look interesting. I’ll let you know about those when I find out about the availability of the classes. The one that I’m really interested in is the Surf and Turf for Sweethearts. We’ll be learning how to make Gougere (a classic french cheese puff), Australian-Style Surf and Turf with Tangy Beef Sauce, Buttermilk and Herb Mashed Potatoes, Sauteed Spinach with Pine Nuts and Golden Raisins, and Red Velvet Cupcakes with Cream Cheese Frosting.
Tomorrow, after my cooking class, I’ll come home and start grilling my roadside chicken. Hmmm…… I’m hungry. I’ll be posting my recipe for Thai Shrimp Curry that I made last week and, oh my, was it ever yummy.
